The artist Sarah Klein states;
"In my performance series The Bread Project, I bring the process of making bread to people in unexpected places. In office lobbies and art venues, I invite people to join in the eight-hour process of making naturally leavened bread. Each venue is different and comes with its own issues. The bread making process acts in contrast to the focus of the space, questioning our busy lifestyle and our expectations of a place. Passersby are encouraged to join in the process either as an observer or by getting their hands into the sticky dough. In the end the bread is baked, sliced, and given away to all".

In "The Bread Project", 1998 650 California Street, San Francisco

In a high-rise office building in downtown San Francisco, employees and passersby were invited to join in the process of making sourdough bread. At 9:00 am, flour, water and salt were mixed together into a batter. Throughout the day, care for the dough continued with active periods of kneading and shaping and with restful periods of rising and baking. Around 5:00 p.m. when the bread was done, the hot loaves were sliced and given away to all.

-Presented in conjunction with the Secession Gallery during "High Speed Art", a series of events exploring the relationship between speed and the experience of everyday life.
